Homemade Applewood Smoked Bacon


蘋果木冷煙燻培根

(1) Rub: 1:1:1 equal volume mixture of sea salt, brown sugar and real maple syrup
(2) Pork belly, skinned: Thoroughly coat the surface with rub
(3) Curing: Put the meat into Zip bag and leave in refrigerator for 3-5 days, turn daily
(4) Cold-Smoking: Cold applewood smoke for 3-5 hours, depending on taste. You may apply another thin coating of maple syrup before smoking. You will need a cold smoke generator.
